Fresh coconut yogurt

1 young Thai coconut (scoop out the meat about a cup)

1/2 cup of coconut water

1/3 lemon squeezed

1 tbsp coconut syrup (optional)

1/3 tsp vegan culture starter activated in 1 tbsp warm water

or  probiotic capsule

Makes about 1 cup

Before you start mix 1/3 tsp vegan culture starter with 1 tbsp warm water and let it sit for about 20 minutes to activate the cultures.

Blend all the above ingredients together with the starter. Let it rest in the fridge over night. It will be nice and thick consistency.

If you would like to eat coconut yogurt right away I usually use probiotic capsule instead of the starter. I empty the capsule and add it to the mixture. It’s an easy way to get your little ones eat live cultures without dairy.

This coconut yogurt is super quick and super fresh. It can’t get any fresher than this! Fresh, quick coconut yogurt at your home in no time. It’s delicious and soooo healthy.
