Makes about 4 medium pancakes

1 medium green zucchini

1 cup garbanzo flour

1/2 water

1 tbsp flax meal

Seasoning to your taste (I used Himalayan sea salt, black pepper and marjoram)

Coconut oil for frying.

Blend all the ingredients together in a blender. If the batter is too runny add more garbanzo flour. If it’s to thick add more water.

Heat a lightly oiled frying pan over medium heat. Pour the batter onto the pan using about 1/2 cup for each pancake. Brown on both sides and serve.

These garbanzo savory pancakes are delicious and great way to get your little ones eat zucchini and garbanzo flour. Garbanzo savory pancakes have beautiful color and are very filling. You can serve them with fresh veggies or just spread your favorite hummus on the top.
